Omelette Sandwich πŸ₯ͺ🍳

A quick and satisfying sandwich made with crispy spam, fluffy egg, and melted cheese, all wrapped together in one pan. Perfect for an easy breakfast, lunch, or comfort meal.

Ingredients

  • 3 eggs
  • 2 slices bread
  • 1 slice Spam
  • 1 slice cheese
  • 1 leaf lettuce
  • 1 –2 tsp Sriracha sauce
  • 3 tbsp oil
  • 1 tsp white sesame seeds

Instructions

  • Prepare the ingredients: Whisk 3 eggs until smooth with no streaks. Wash and dry 1 leaf lettuce. Trim 2 slices of bread. Slice 1 piece of Spam and prep 1 slice of cheese and 1–2 tsp sriracha sauce.
  • Cook the Spam: Heat 1 tbsp oil in a non-stick pan over medium heat for 1–2 minutes. Fry 1 slice of Spam until golden and crisp on both sides, then set aside.
  • Cook the egg and bread: Add 2 tbsp oil on medium-low heat. Pour in the 3 whisked eggs to coat the pan. Place 2 slices of bread side by side onto the wet egg, press down, then flip each slice immediately to coat both sides in egg.
  • Assemble the fillings: Once the egg is set, flip the entire egg-and-bread piece over. On one slice, layer 1 slice of cheese, the cooked Spam, 1 leaf lettuce, and 1–2 tsp sriracha sauce.
  • Fold and finish: Fold the overhanging egg edges inward over the fillings. Fold the empty bread slice over to form a sandwich. Press lightly and heat for 30–60 seconds to melt the cheese.
  • Garnish and serve: Transfer to a plate and sprinkle with 1 tsp white sesame seeds. Cut diagonally and serve immediately.

Notes

  • Use medium to low heat: Keeps the egg soft and prevents burning.
  • Don’t overcook the egg: Soft egg gives a much better texture than dry egg.
  • Try different sauces: Mayo, sweet chilli, or honey mustard all work well.
  • Upgrade your sandwich: Add tomato, avocado, or caramelised onion.
  • Use soft bread: Soft bread gives that fluffy, cafΓ©-style texture.
