Ingredients

Durian Filling

  • 300 g durian flesh

Snow Skin Wrapper (makes around 12 mooncakes)

  • 50 g glutinous rice flour
  • 50 g rice flour
  • 25 g wheat starch
  • 25 g sugar
  • 25 g condensed milk
  • 185 g milk

Toasted Glutinous Rice Flour (for dusting)

  • 25 g glutinous rice flour

Instructions

Toasted Glutinous Rice Flour

  • Add 25g glutinous rice flour to a non-stick pan.
  • Toast over low heat, stirring constantly until slightly yellow and nutty-smelling.
  • Let it cool completely before using.

Snow Skin Wrapper (12 wrappers)

  • In a large bowl, whisk together all wrapper ingredients until smooth.
  • Cover with plastic wrap and poke a few small holes on top.
  • Microwave on high for 2½ minutes.
  • Add a little oil and knead until smooth and glossy (use gloves if sticky).
  • Cover again and chill for 20–30 minutes.
  • Divide into 25g balls and set aside.

Durian Filling

  • Scoop durian flesh and divide into 25g balls.
  • Wrap each in plastic wrap and freeze for 20–30 minutes until slightly firm.

Assembly

  • Take one snow skin (25g) and one durian filling (25g).
  • Wrap the filling completely with the snow skin dough and seal.
  • Lightly coat with toasted glutinous rice flour.
  • Dust your mooncake mold with the same flour.
  • Place the smooth side down into the mold and press gently to form pattern.

Notes

Storage
  • Fridge (3 days): Store in an airtight container between 0–4°C.
  • Freezer (2–3 weeks): Wrap each mooncake tightly in plastic wrap to prevent odour.
  • Thawing: Move to fridge for 3–4 hours before eating — the texture becomes soft again.
Quick Tips
  • Soft skin fix: If dough becomes firm, leave at room temp for a few minutes.
  • Molding pressure: Press gently — too much force can burst the snow skin.
  • Durian smell: Wrap well or store separately to avoid transferring the aroma.
