Ingredients

  • 300 g pumpkin (about 2 cups, peeled and cut into 1–2 cm cubes)
  • 2 eggs
  • 2 tbsp all-purpose flour
  • 1 tbsp black sesame seeds (for garnish)

Instructions

  • Prep the pumpkin: Peel, deseed, and cut pumpkin into 1–2 cm cubes.
  • Make the batter: In a bowl, combine pumpkin, 2 eggs, 2 tbsp flour, and 1 tsp sugar (if using). Mix until everything is evenly coated and sticks together loosely.
  • Shape the fritters: Line your air fryer basket with baking paper and poke a few small holes for airflow. Spoon 1–2 tbsp of mixture for each fritter, shaping into 6–7 cm wide and 1 cm thick patties.
  • Air fry: Cook at 180°C (350°F) for 10 minutes. Flip gently, then air fry another 8–10 minutes until lightly golden and tender inside.
  • Garnish: Transfer to a plate and sprinkle black sesame seeds on top. Serve warm — optionally with a drizzle of honey or maple syrup.

Notes

  • Serving idea: Great as a light breakfast, snack, or healthy dessert with a drizzle of honey.
  • Storage & Reheating: Keep leftovers in an airtight container for up to 2 days. Reheat in air fryer at 160°C (320°F) for 3–4 mins.
  • Texture tip: These fritters are meant to be soft and moist, not crispy.
