Prepare the ingredients: Drain 1/2 cup canned sweet corn thoroughly and pat dry with paper towel if needed. Lay 2 slices white sandwich bread on a board. Prepare 2 slices square cheese, 3 tbsp Japanese mayonnaise and 1 cup shredded mozzarella.
Layer the base cheese: Place 1 slice square cheese on each slice of white sandwich bread, covering most of the surface.
Drizzle the Japanese mayonnaise: Spread 1.5 tbsp Japanese mayonnaise over each slice in 5 zig-zag “Z” lines.
Add the sweet corn: Divide 1/2 cup drained sweet corn evenly (1/4 cup per slice) over the mayonnaise. Press gently.
Top with mozzarella: Cover each slice with 1/2 cup shredded mozzarella (total 1 cup), ensuring the corn is mostly covered.
Air fry: Place both slices into the air fryer basket in a single layer. Air fry at 175°C for 5 minutes until melted and lightly golden.
Garnish and serve: Sprinkle 1/4 tsp dried parsley or 1 tbsp chopped spring onions if using. Cool for 1–2 minutes before serving.
