Omelette Sandwich 🥪🍳

There’s something about a hot, freshly made sandwich that just hits differently, especially when it’s made from simple ingredients you probably already have at home. This Omelette Sandwich is one of those recipes that feels a little nostalgic, a little indulgent, and incredibly comforting all at the same time.

It’s inspired by those quick café-style egg sandwiches you might grab on the go, but with a homemade twist that honestly tastes even better. You’ve got crispy, golden spam that’s slightly salty and savoury, soft fluffy egg that wraps around the bread like a blanket, and melted cheese that ties everything together into one rich, satisfying bite. Then there’s the fresh crunch from the lettuce and that little kick from the sauce. It’s a perfect balance of textures and flavours.

What makes this recipe really special is the way everything is cooked together in one pan. The egg isn’t just a filling. It becomes part of the structure of the sandwich, holding everything neatly together. The bread soaks up just enough egg to stay soft inside while lightly crisping on the outside, giving you that contrast between fluffy and slightly toasted.

It’s also incredibly flexible. You can keep it simple for a quick breakfast, or dress it up with extra fillings and sauces depending on what you’re in the mood for. Whether you’re cooking for yourself, making a casual brunch, or just craving something warm and satisfying without too much effort, this sandwich ticks all the boxes.

Ingredients

  • 3 eggs
  • 2 slices bread
  • 1 slice spam
  • 1 slice cheese
  • 1 leaf lettuce
  • 1–2 tsp sriracha sauce
  • 3 tbsp oil
  • 1 tsp white sesame seeds

Instructions

1. Prepare the ingredients

Crack three eggs into a medium bowl and whisk thoroughly until the yolks and whites are completely combined into a smooth, even mixture — there should be no visible streaks. Wash and dry the lettuce leaf. Trim two slices of bread so they fit in the pan side by side. Prepare your cheese, slice the Spam, and have your preferred sauces ready to go. Place all ingredients within easy reach of your cooking area.

❤️ Tip: This recipe moves quite quickly once the egg hits the pan, so having everything prepped and within reach will prevent overcooking or rushing.

2. Cook the spam

Place a non-stick pan over medium heat and let it warm up for about 1–2 minutes. Add around 1 tbsp oil and swirl it gently to coat the surface evenly. Once the oil looks slightly shiny, place the spam slice into the pan. Let it cook undisturbed for a while so a golden crust forms, then flip and cook the other side until both sides are nicely browned with slightly crisp edges. You can then set it aside briefly.

3. Cook the egg and add the bread

Lower the heat to medium-low and add 2 tbsp oil. Pour the beaten eggs into the pan and tilt it slightly so the egg spreads into a thin, even layer covering the base. While the egg is still wet on top, place the two slices of bread side by side directly onto the egg. Press them down gently so they absorb the egg and stick to it. Then carefully flip each slice of bread so the other side also gets coated with egg.

❤️ Tip: Timing is important here — if the egg sets too much before adding the bread, it won’t stick properly.

4. Flip and assemble the fillings

Let the egg cook until mostly set — it should no longer look runny on top but still feel soft. Carefully slide a spatula under the egg and bread and flip the whole piece over in one motion. Reduce the heat to low or turn it off. On one slice of bread, place the cheese first so it begins to melt from the heat, then add the cooked spam on top. Layer the lettuce over the spam and drizzle your sriracha sauce or any sauce you like evenly across the fillings.

❤️ Tip: Placing cheese first allows it to melt better and helps “hold” the fillings together.

5. Fold and finish the sandwich

You’ll notice extra egg around the edges of the bread — gently fold these parts inward over the fillings to create a neat shape. Then take the second slice of bread and fold it over onto the filled slice, forming a sandwich. Press down lightly so everything sticks together. Let it sit in the pan on low heat for about 30–60 seconds so the cheese melts further and the sandwich warms through.

6. Garnish and serve

Carefully transfer the sandwich onto a plate. If you like, sprinkle white sesame seeds over the top for a bit of extra texture and visual appeal. Use a sharp knife to cut the sandwich in half (diagonally looks nicest), and serve immediately while it’s still warm, soft, and slightly crispy on the outside.

Extra Tips

1. Use medium to low heat

Keeps the egg soft and prevents burning.

2. Don’t overcook the egg

Soft egg gives a much better texture than dry egg.

3. Try different sauces

Mayo, sweet chilli, or honey mustard all work well.

4. Upgrade your sandwich

Add tomato, avocado, or caramelised onion.

5. Use soft bread

Soft bread gives that fluffy, café-style texture
