10 Mins Air Fryer Cheesy Corn Toast
If you grew up loving bakery-style corn and cheese buns, this one is going to hit you right in the comfort zone.
This is one of those ridiculously easy, low-effort, high-reward snacks. Soft white bread layered with a slice of cheese, drizzled generously with Japanese mayonnaise in a zig-zag pattern (yes, the proper 5 “Z” lines), topped with sweet corn, and finished with a thick blanket of mozzarella. Then straight into the air fryer at 175°C for 5 minutes.
The result? Crispy edges, stretchy melted cheese, creamy mayo, and juicy sweet corn in every bite. It’s savoury, slightly sweet, cheesy and completely addictive.
Perfect for breakfast, after-school snacks, or late-night cravings when you don’t want to cook something complicated.

Ingredients
- 2 slices white sandwich bread
- 2 slices square cheese (cheddar-style or processed cheese)
- 3 tbsp Japanese mayonnaise
- 1/2 cup canned sweet corn kernels (drained well)
- 1 cup shredded mozzarella cheese
Optional
- 1 tbsp chopped spring onions
- 1/4 tsp black pepper
- 1 pinch salt (if needed)
- 1/4 tsp dried parsley for garnish

Instructions
1. Prepare the ingredients
Drain 1/2 cup canned sweet corn thoroughly. Shake off excess water and pat dry slightly with paper towel if needed. Too much moisture can make the toast soggy instead of crispy.
Lay 2 slices white sandwich bread on a clean board or plate.
Have your 2 slices square cheese, 3 tbsp Japanese mayonnaise and 1 cup shredded mozzarella ready to go.
2. Layer the base cheese
Place 1 slice square cheese on top of each slice of white bread, covering most of the surface.
This first layer melts and acts like a creamy barrier between the bread and the toppings.
❤️ Tip: If your bread is very soft and thin, lightly toast it for 1–2 minutes first to prevent sogginess.

3. Drizzle the Japanese mayonnaise
Using about 1.5 tbsp Japanese mayonnaise per slice, pipe or squeeze it over the cheese in a zig-zag pattern.
Aim for around 5 “Z” lines across each slice. Don’t be shy — the mayo melts into the corn and cheese and adds that signature creamy flavour.
4. Add the sweet corn
Evenly distribute 1/4 cup drained sweet corn over each slice (total 1/2 cup). Press the corn down gently so it sticks into the mayo and doesn’t roll off later.
If using, sprinkle over 1/4 tsp black pepper at this stage.
5. Top with mozzarella
Cover each slice generously with 1/2 cup shredded mozzarella (total 1 cup). Make sure the corn is mostly covered. This creates that stretchy, golden cheese top.
Don’t compress the mozzarella too tightly. A light, fluffy layer melts more evenly and browns better.

6. Air fry
Place the prepared toast slices into the air fryer basket in a single layer.
Air fry at 175°C for 5 minutes, or until the mozzarella is fully melted and lightly golden around the edges.
❤️ Tip: Every air fryer runs slightly differently. Start checking at 4 minutes. If you want extra browning, add 1 more minute.
7. Garnish and serve
Carefully remove the toast from the air fryer. If using, sprinkle 1/4 tsp dried parsley or 1tbsp chopped spring onions on top.
Let it cool for 1–2 minutes before cutting or eating — the cheese will be very hot and stretchy.

Extra Tips
1. Flavour boost
Add 1 tbsp finely diced ham or cooked bacon under the mozzarella for extra savoury flavour.
2. Spice kick
Add 1/2 tsp chilli flakes or a drizzle of sriracha over the mayo for gentle heat.
3. Garlic twist
Mix 1/4 tsp garlic powder into the Japanese mayonnaise for a subtle garlic flavour.
4. Creamy upgrade
Mix 1tbsp cream cheese into the 1/2 cup sweet corn before topping for a richer filling.
5. Crispier base
Brush the bottom of each slice with 1tsp melted butter before assembling for extra golden crunch.
