Pumpkin Fritters

These pumpkin fritters are one of my favourite lazy-day snacks — soft, sweet, warm, and golden, with no oil, no salt, and no frying pan mess. Just mix, shape, and air fry.
Most pumpkin fritter recipes tell you to steam or boil the pumpkin first, but honestly, you don’t need to. Raw pumpkin cooks beautifully in the air fryer — it softens from the inside out while the outside turns slightly golden.
What I love most about these fritters is how simple and wholesome they are. You only need four main ingredients — pumpkin, eggs, flour, and black sesame seeds — yet they come out so flavourful. The pumpkin gives them natural sweetness, the eggs hold everything together, and the flour adds a little structure so the fritters stay in shape.
This is the kind of recipe that’s perfect for when you crave something warm but don’t want to deal with oil or complicated steps. It’s budget-friendly, healthy, and mess-free — even the cleanup is easy because the fritters sit on baking paper in the air fryer.

- 300g pumpkin (about 2 cups, peeled and cut into 1-2cm cubes)
- 2 eggs
- 2 tbsp all-purpose flour
- 1 tbsp black sesame seeds (for garnish after cooking)

- A light drizzle of oil (for brushing before air frying)

Instructions
1. Prepare the pumpkin
Start by peeling the pumpkin with a knife. Remove all the skin and seeds.
Cut the pumpkin into small cubes — about 1-2 cm pieces. The smaller the cubes, the faster and more evenly they cook in the air fryer.
Transfer the cubed pumpkin into a large mixing bowl.
❤️ Tip: Try to keep the pieces roughly the same size so they cook evenly.
2. Make the batter
Crack 2 eggs directly into the bowl with the pumpkin.
Add 2 tbsp of flour and 1 tsp sugar if you’d like a slightly sweeter fritter.
Use a spoon or spatula to mix everything together. You’ll see the flour and egg start to coat each pumpkin piece, creating a thick, sticky mixture.
The mixture shouldn’t be watery or too dry — it should stick together loosely when you scoop some up.
Keep mixing until the pumpkin pieces look evenly coated.

- Too wet? Sprinkle in another ½ tablespoon of flour.
- Too dry? Add a tiny splash (1 tsp) of water or beat the eggs slightly before adding.

3. Shape the fritters
Cut a piece of baking paper to fit the bottom of your air fryer basket. Make a few small holes in the baking paper using a fork or scissors — this helps the hot air circulate and cook the fritters evenly.
Take a spoonful (about 1–2 tablespoons) of the pumpkin mixture and gently shape it into a round, flat patty — roughly 6–7 cm wide and 1 cm thick.
Place each fritter directly on the baking paper as you go.
Try to leave a little space (about 1–2 cm) between each one — that way, they won’t stick together and the hot air can circulate properly, helping them cook evenly and stay nicely shaped.

4. Air fry the first side
Set your air fryer to 180°C (350°F).
Cook the fritters for 10 minutes.
Halfway through, you’ll notice the top starting to look slightly firm and dry — that’s your sign it’s time to flip.
After 10 minutes, open the basket carefully (it’s hot!), and flip each fritter gently using tongs or a spatula.
5. Air fry the other side
Once flipped, air fry again at 180°C for another 8–10 minutes.
By the end, the fritters should look lightly golden on the outside, with a firm but soft texture when pressed.
You can test one by poking a fork through the centre — it should slide in easily, meaning the pumpkin inside is fully tender.

6. Garnish and serve
Once done, carefully transfer the fritters onto a plate using tongs. Sprinkle black sesame seeds evenly on top for a nutty aroma.
You can enjoy them plain, or if you want a little extra sweetness, drizzle with honey, maple syrup, or condensed milk.
When you take a bite, the outside should be just firm enough to hold shape, while the inside melts softly — naturally sweet, warm, and comforting.
